  • 3 medium ripe bananas
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 12-cup muffin tin or line it with paper liners.
  • Mash the ripe bananas in a large mixing bowl.
  • Mix the wet ingredients: add granulated sugar, brown sugar, melted butter, eggs, and vanilla extract.
  • Combine the dry ingredients: whisk together flour, baking soda, and salt in a separate bowl.
  • Gently add the dry ingredients to the wet mixture and incorporate without overmixing. Fold in chocolate chips.
  • Spoon the batter into each muffin cup, filling them about ¾ full.
  • Bake for 18 to 22 minutes or until a toothpick comes out clean.
  • Allow cooling for 5-10 minutes before transferring to a wire rack.

Notes

Use very ripe bananas for best flavor. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
