Ingredients
  

  • 12 ounces pasta (your choice)
  • 2 cups cherry tomatoes
  • 8 ounces feta cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil for garnish
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a medium-sized baking dish, combine cherry tomatoes, minced garlic, and olive oil. Season with salt and pepper.
  • Make a well in the center of the mixture and place the block of feta cheese. Drizzle more olive oil on top.
  • Bake for about 25-30 minutes until tomatoes burst and feta is golden.
  • While baking, cook the pasta according to package instructions in salted water until al dente. Reserve some pasta water before draining.
  • Mash the feta and tomatoes together with a fork to create a creamy sauce. Mix in the cooked pasta. Add reserved pasta water if needed.
  • Serve hot topped with red pepper flakes, fresh basil, and a drizzle of olive oil.

Notes

For an extra depth of flavor, roast garlic with the tomatoes. Don't skip fresh basil for balance. Store leftovers in an airtight container for up to 3 days.
