Ingredients
  

  • 2 cups cooked rice (brown, white, or jasmine)
  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach or mixed greens
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional toppings: feta cheese, cilantro, or hot sauce

Instructions
 

  • Gather all your ingredients and chop your vegetables beforehand.
  • Cook the rice according to package instructions.
  • Pat the chicken breasts dry and rub with olive oil, garlic powder, paprika, salt, and pepper.
  • Heat a skillet over medium-high heat and cook the chicken for 7-8 minutes on each side until cooked through.
  • Let the chicken rest for a few minutes before slicing it into strips.
  • In a large bowl, layer the cooked rice, fresh greens, sliced chicken, cherry tomatoes, and avocado.
  • Squeeze fresh lime juice over the bowl and add desired toppings.
  • Serve immediately.

Notes

Cook rice in broth for added flavor. Prepare vegetables in advance. Experiment with different grains.
