Ingredients
  

  • 2 pounds fresh apricots
  • 1.5 cups sugar
  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 1 packet pectin (optional)

Instructions
 

  • Wash apricots, cut in half, remove pits, and chop coarsely.
  • In a large pot, mix apricots, sugar, lemon juice, and water.
  • Heat on medium until simmering, stirring occasionally.
  • Add pectin if using, following package instructions.
  • Simmer for 30-40 minutes, testing for consistency.
  • Ladle into sterilized mason jars, leaving 1/4 inch of headspace.
  • Process in a water bath for 5-10 minutes, then cool completely.

Notes

Choose ripe apricots for maximum flavor. Blanching can help with peeling. Store jars in a cool, dark place.
